Guys, I’ve been away and to be honest, not really meal prepping! Typically I would beat myself up over this. The shame cycle would begin and I would spiral and spiral with negative comments and criticisms of myself. I would tell myself things like “way to go, started another project and didn’t keep up with it,” “this is why you will never be good enough.”
While those thoughts did try to pop on my head, I fought them off and reminded myself that I didn’t start this blog for other people, I started it for myself. The last couple of weeks were jammed pack with things to do. Classes ended. I started working a bit more. The Water Law Symposium happened. Life man, life. It just gets busy and sometimes things you enjoy have to be put on the back burner, and that’s okay. It doesn’t mean you fail. It doesn’t mean that you can’t just pick up where you left off. Now believing those things are easier said than done. But here we are!
I did try to meal prep a little throughout these past two weeks. I managed to make 4 dinners for week 16 and 4 lunches for week 15.

Yes, I made salads again. This time it was actually pretty tasty. My friend Alicia gave me the recipe for this salad which includes spinach, feta cheese, quinoa, blueberries and toasted almonds. I switched Alicia’s blueberries for cranberries, mainly because I forgot which berries when shopping and the toasted almonds for olives, because I really wanted almonds. Of course I seasoned the salad and added a dressing. This was a great salad!! I really enjoyed it, but came to a realization… I am a two salads a week kind of girl and there’s nothing wrong with that. This is something I will definitely make again (and next time I will follow Alicia’s recipe and chop the spinach some more).

During this past week I kept it simple for dinners. Pork Chops and Broccoli. I love the ability to use frozen vegetables throughout the week. It makes life simple and tastes just as good. All I used on the pork chops is a lemon pepper marinade.
And well that’s that. This next week I am meal prepping FOR SURE as we head into finals. I’m super excited about the food we have coming up.
