Meal Prep-Weeks 17, 18, and 19 of 2019

What’s up everyone. It’s been a hot minute since I sat down to write or even took time to fully meal prep. It’s been a rough couple of weeks mentally. In the past three weeks I’ve turned 30, took two final exams, and finished law school. That’s a lot of transition and for someone who struggles with anxiety and change and depression, that much transition is taxing on the brain. But I have been making some food along the way. I’m going to keep this blog short and simple, so enjoy the photos. Check out the captions for what the meals are!

French Onion Turkey Burgers in Lettuce (inspired by my friend Alicia) with Mixed Frozen Veggies
Egg Scramble in Hollandaise Sauce with Boulder Sausage Links
Hodge Podge Quiche (made from odds and ends in my fridge and freezer- eggs, sausage, feta cheese and riced broccoli)
Beyond Meat burgers and Sweet Potato Fries
Eggs in a Hole with side of Fried Eggs and Roasted Sweet Pepper

I’m working on getting into a new routine, so these posts will be come regular again! And now that school’s over, let’s see if we can’t make this a little more exciting!
