Meal Prep: Week 41 of 2019

Alright, Alright, Alright, Alright… we are back with another look at this week’s meals.

At first, I bought the coleslaw veggies above to mix with my apple slaw below. But upon execution of the meals, I was like “I’m good brah” and decided to hold off on the coleslaw mix until Friday when I decided to make some steaks from ButcherBox. I googled a coleslaw dressing recipe (super simple ingredients: lemon juice, mayo, sugar, salt, pepper, vinegar) and bam, we had the best coleslaw I’ve EVER eaten in my life. I mean this was top of the line.

For lunches I made homemade mashed potatoes, pork chops with a cinnamon apple sauerkraut slaw. What I love about pork chops is that they pair well together with granny smith apples and cinnamon. I chopped up the apples, added lemon juice and cinnamon and then (not pictured here) added sauerkraut for a nice tang. This was a great hearty fall meal that went well with our winter snowstorm this past Thursday. Who called for the 4.5 inches of snow in the middle of October… it wasn’t welcomed.

At the beginning of the week Haris and I ate this lovely orange bowl of goodness for dinners. It’s simple with just Vodka Sauce, Spaghetti Squash, Chicken and cheese. Haris had never had spaghetti squash before and loved it in this dish! Overall this meal took about an hour to prepare due to the squash size and density and needing to cook a little longer than I anticipated. But it’s lasted all week and tastes great! Let me know if anyone wants a tutorial on how to cook Spaghetti Squash!

Lastly, I made my take on an apple crumble. It’s a little less crumbly, but still very hearty like the traditional dish. All you have to do is 1) throw some ghee into a skillet and let it melt a little, 2) add sliced apples, brown sugar and cinnamon, 3) let the apples get soft; 4) add some vanilla; 5) add a mixture of oats, brown sugar and melted butter, 5) let everything get soft and melty together; 6) scoop out onto a fall plate and add some DiNoci Salty Caramel Ice Cream and 7) enjoy!
