Recipe: Apple and Raisin Shortcake

As promised in yesterday’s post, here’s the recipe for the Apple and Raisin Shortcake. Before we get into it, know this, you don’t have to include raisins in this recipe if you don’t like them. Just omit them and the recipe will still be great.

Ingredients:

  • 1 stick of butter
  • 1 cup brown sugar
  • 2 large apples
  • 1 3/4 cup raisins
  • 1 tsp vanilla extract
  • 1 tbsp nutmeg
  • 1 tbsp cinnamon
  • Desert shells

Step One: Cut them apples up. I used a little corer and then chop up the apples into itty bitty pieces… and well some pieces are bigger and by itty bitty I mean small. Just look at the picture.

Step Two: Heat up the butter and brown sugar.

Step Three: Once the butter is melted add in the cinnamon, nutmeg, vanilla and apples. Let the apples soften a bit. Make sure to stir everything to get it nice and incorporated.

Step Four: Add in the raisins and cook until the raisins are squishy and a syrup beings to form. This should take about 5 minutes. I recommend stirring it continuously to keep the mixture from burning.

Step Five: Spoon the apple and raisin mixture into a dessert shell and make sure to get a good amount of the syrup. Optional: Serve with Dinoci Salted Caramel Ice Cream.

Step Six: ENJOY!
