What a wild week of weather we’ve had out here in Denver, Colorado. It has snowed twice this week and yesterday we got 10 inches of snow at my house. It’s been crazy for this Las Vegas girl to drive through or deal with in general. Either way, it was pretty much a regular day in eating.

I’ve been trying to use up some ingredients sitting in my fridge waiting to be used. So I thought… why not make egg bites this week. Spinach, eggs, ham, cheese, carrots… bake them in a muffin tin and bam, breakfast. I’ve made these before and they were delicious, slightly different but delicious, and for some reason, this batch just wasn’t all that good. It turned out really dry. Oh well, we will try again another week.

It was all about keeping it simple again this week. Bagged salad and pork chops I had in the freezer for the win! This is just a reminder to all of you out there… you don’t always have to “have it together” and make everything in life from scratch. If you are low on time or energy, grab a bag of pre-made salad and just keep on moving.

Haris is studying for the Bar Exam in February, which means that I am in charge of meal prepping our dinners. Since January was so sunny and temperate, I wanted to go with a nice light dish. So pasta salad it was! This is an amazing dish! Plus its very aesthetic. Haris enjoyed it too. He also added baked beans and buffalo cauliflower to the side of his pasta dish each time, which he said surprisingly complimented the dish picture here. Either way, it’s always nice to have someone to cook for and share meals with.
