We are at the end of another week. Sometimes the weeks just seem to pile up. But I’m excited for the next few weeks. I get to finally travel. I get to get away from law school for a moment and enjoy family and friends. This week’s food shows that need for travel.

This breakfast was so tasty and easy. Chorizo mixed together with some hash browns and scrambled eggs. Breakfast burritos are so easy to make and to grab and go. And since I tend to have things happen to me that impede on my time (like the printers at school not working and then having to wait for 15 minutes as the new library student workers grabs the printer manual to undo a jam) its helpful to have something so easy to heat up and eat on the go.

For lunch I made another Chrissy Teigen dish. This crab fried rice made my week. It was slightly more expensive than the dishes I normally make, but it was worth every penny. It calmed out the spicy flavors of the Mexican breakfast and had just enough flavor to keep me quickly eating and moving on. I have this really bad habit of just moving throughout the day and not taking time to enjoy the little things that give me pleasure. This meal, for the most part this week, made me stop and enjoy every morsel.

Lastly, there was this beauty. I didn’t make the meatballs from scratch, but I did make the marinara from scratch and boy was it tasty. It made me miss Italy. God I wish I could go back to Italy right this minute, but instead I am stuck in this snowy hell that is law school in Colorado. Man it’s been cold (it’s not much better back at home in Las Vegas which keeps getting snow this winter too). I’m over the cold, but at least this dish was hearty enough to keep me warm.
This next week’s meal prep may not be as wow as these other weeks, but it’ll do what it needs to do, feed me! As always let me know if you want any recipes! They sure are tasty!
