Another week, another blog about the meals I prepped! This week’s menu is a pretty good one:
- Oatmeal with Bananas and Apple Pie Seasoning; Egg, Veggie, and Pork Sausage Scramble
- Shakeology Mint Popsicles
- Toast with Tomato and Bacon
- Hard Boiled Eggs with Cherries and Carrots
- Burrito Bowls- Take number 2
- Strawberries with Coconut

So last week I told you all that I signed up for Butcher Box! Now a few people have asked what Butcher Box is… and well it’s very simple actually. For about $130 a month I get a box of about 8-11 pounds of meat sent to my house. Now maybe you’re thinking, why can’t you just go to the store and buy meat? Well…yes I could… if I wanted to go to numerous grocery stores each week to get grass-fed, antibiotic free meat that doesn’t cost a fortune. And since I don’t want to do that, Butcher Box seems like the next best thing! So this month I got a box of pork sausage, chicken, beef, pork loin and beef shoulder. Also…bacon for life! So far, I’m loving Butcher Box! I’ll keep you all posted though!

I’m really not a homemade smoothie kind of gal! I prefer to go to Tropical Smoothie or Smoothie King for a smoothie. So since I have a bag of Shakeology (in which the chocolate is not great, its pretty weird actually) I decided to try and make popsicles instead. I got this awesome popsicle mold from target for like $10. The pops turned out okay…this Shakeology stuff is so not tasty…but I added some mint extract which makes it bearable. Moral of the story: don’t buy Shakeology.

Post workout this was something simple to eat. It’s your basic BLT without the L. The Bacon = amazing though!! Thank you Butcher Box!

I love deviled eggs but find they are a bit hard to make with very little mayo. So I decided to make hard-boiled eggs and just add very little mayo and mustard to the top. It added just enough favor and made the eggs not so dry! Also, those green onions, I grew them. They are from my garden. I polished off the eggs with some cherries and carrots. What I like about this meal is how flexible it can be. Switch out the cherries for strawberries, raspberries or apple slices and Bam! it’s like a whole new meal! It’s like a Starbucks Protein Box, BUT SO MUCH BETTER and cheaper.

Next up is a new version of my burrito bowl. This week I added spinach instead of romaine lettuce and tossed on some shredded carrots. Instead of using chicken I slow-cooked some pork loin with chili powder, garlic, pepper and salt. I chopped it up and tossed it in with some pico and mango salsa. It was great again! Burrito bowls are slowly becoming my favorite!

Here’s a nice afternoon treat. Chop up some strawberries, add some peanut butter and shredded coconut. Now this is a dessert I looked forward to each day. It rounded out the day and tasted great! Don’t get me wrong though…I still love ice cream and will always love ice cream…but this works too!
