Meal Prep- Week 37 of 2019

What a week. Did anyone else feel like this week was extra tiring and extra long but short at the same time? Anyways, it’s over and that means it’s time to share what I ate this week, which sometimes I want to start off by saying I know (as my friend Russell would say) “Nobody Cares.”

But I care, so here we go. First up is the photo above and what I like to call: Taco Fried Rice. Don’t be too impressed. I repurposed some rice from a thai curry haris and I made and just added some hamburger meat, fish sauce, peppers, onions, taco seasoning, and two eggs. This was a great lunch for the week. Just add some lime juice after you heat it up.

Now, I have some stomach issues, so I’ve been trying to limit my gluten intake. So I tested out some gluten free ramen noodles. I made the broth from chicken broth , ginger, and garlic. I added some cucumbers and a pork loin that I made earlier in the week and let the noodles soak in all the yumminess. I was afraid the noodles would be gross, but I’m here to say these noodles were FANTASTIC!

Now these buns aren’t gluten free, but when you have a craving, you have a craving. For me it was hot dogs. Haris luckily was game, but as you’ll see we have very different tastes. I wanted Oscar Meyer Cheese Dogs with Turkey Chili, cheese and sauerkraut.

Haris wanted Portuguese sausages with spicy mustard and sauerkraut and baked beans on the side. So what did we do? Bought our own stuff and made some bomb hot dogs. Mine of course were way better!

With our hot dogs we had zucchini fries. The zucchini came from the garden. I chopped it up added it to a pan with olive oil, parmesan, salt and pepper. I recommend baking it on 400 degrees for about 30 minutes to help evaporate the water and give them a nice crisp! But dip these in sriracha mayo and you are golden.
