Grilled cheese is super fun to make when you customize it. I made this custom sandwich that I love for Haris once and he dubbed the “Ellis Sandwich.” I thought I’d share it with you!

Ingredients:
- Sliced Turkey
- Dijon Mustard
- Provolone
- Sharp Cheddar
- Zucchini
- Gluten Free Bread
- Avocado Mayo
- Butter (not pictured)
Step One: make some zucchini ribbons. This is very easy to do if you have a mandolin cutter. This thing is literally a life saver! Anyways, cut a zucchini into a a series of ribbons!
Step Two: Grab your bread, smear mustard on one piece and mayo on the other.
Step Three: Layer on the cheese, zucchini ribbons and turkey. I find it best to have a piece of cheese between two layer of zucchini ribbons to help them stick!

Step four: Grab a skillet and add some butter. Now traditionally you add butter to the bread, but a friend years ago taught me that not only is it easier, but it tastes better when you add it to the skillet instead!
Step five: Cook that sandwich! To help the cheese melt, toss a lid over it as you toast each side!

Step seven: Enjoy!! (no utensils necessary….check back on Saturday to see what the spoon was used for!)
