Meal Prep: Week 43 of 2019

Another week another meal prep. This week was a rough one for sure. I had to have emergency dental work (damn crown falling out) and my schedule was rather bumpy, but nevertheless I had some good food. First up, this lovely breakfast from this morning! I love a good Saturday morning breakfast with Haris. Haris made the eggs, I made the Bacon and Gluten-free Pumpkin Spice Pancakes. The cute little pumpkin shapes are from a mini pancake maker that was $9 at Target. (Thank you Bailey for the idea to get this little maker!)

Now below is my normal daily breakfast. We have an over easy egg with extra egg whites, gluten-free toast with sauerkraut and some pork sausage. It takes about 5 minutes to make (I make the pork sausage in a huge batch on Monday and then eat on it all week).

Also, Haris and I tried a new pre-made spicy ginger and chicken broth for ramen this week! SO GOOD!

For dinner one night we had this Banza Mac-n-cheese. The noodles are made from chickpeas and are FANTASTIC! We made the breaded chicken tenders ourselves. The breading is panko and eggs with seasonings. Fry it up to get the golden brown coloring and then bake for about 10 minutes at 350 degrees. It’s quick and easy!

And then of course we had steak and asparagus. I have a freezer full of steak (thank you ButcherBox!), so we will be eating tons of steak in the next month. I mean isn’t this lovely???
