My friend Samantha Wolcott gave me this recipe to share for the blog! It’a recipe she found in 2009 and has made even better! Make sure to check this out and then check her out on instagram @itsasamthing.

Ingredients:
- 4-6 Chicken Breasts
- 2 bags of Cheese
- 1 large can of Green Chile Enchilada Sauce
- 2-4 Limes
- 6 tbsp Honey
- 1 tbsp Chili powder
- 10 Tortillas
- 1 can of Black Beans drained and rinsed
**Preheat the oven to 350 degrees

One: Cook the chicken. You can either boil it in some water or get fancy and use the crockpot, add some chicken broth and water, some taco seasoning it you want and let the chicken get nice and tender.
Two: Take out that chicken and shred it!!
Three: In a medium bowl mix the chili powder, juice of the limes, and the honey together until there isn’t any honey sticking to the side. Then pour this over the chicken and mix it all together.

Four: Get all your ingredients out. Lay out a tortilla and generously spoon some chicken and beans on it and sprinkle a TON of cheese over all of that!

Five: Roll the tortilla up and tuck it in nicely to your Pyrex dish or whatever you have.

Six: Repeat steps 4 & 5 until you fill that dish up with yummy enchiladas.

Seven: Pour that green chile sauce all over the tucked in tortilla rolls. Generously add the cheese to the top. I added some leftover shredded chicken over that. Do it or don’t it won’t make a difference.
Eight: Bake at 350 for 25 minutes.

Nine: ENJOY!!!
