Recipe: Cheesy Mashed Potatoes

I love potatoes… french fries, tater tots, baked potatoes, potato chips, and most of all… mashed potatoes… especially with cheese. So I thought to myself, why not share this love with a really easy recipe!

Ingredients:

  • 3 medium to large potatoes
  • Cheese block of your choice (I chose Gouda for this round)
  • A cup of milk
  • A stick of butter
  • Salt and pepper
  • Green Onions (just a little bit off the top will do!)

Step One: Peel the potatoes and chop them into about 1/4 inch “cubes”… they don’t actually have to be cubes because well potatoes are round, so just make them about 1/4 inch shapes.

Step Two: Put the potatoes in a pot of water and boil those suckers. Make sure all of the potatoes are under the water! If you like to salt your water go ahead… I never do, but I hear it does give the potatoes a little more flavor! The potatoes usually take about 15-20 minutes to boil and get soft.

Step Three: While your potatoes are in the jacuzzi bath, cut up your cheese into nice little pieces. The small the pieces, the easier it melts, the larger the pieces the more cheese blobs you get! It’s up to you to choose which adventure you want… I choose a mixture of both, especially if I’m reheating these later.

Step Four: Use a fork to check those potatoes. If the fork goes through them easily, then proceed… if the potatoes still seem a little hard, boil them a little longer.

Step Five: Pour out the excess water from the potatoes and then put all your ingredients except the green onions into either another bowl or the pot you’ve already been using.

Step Six: Now this part is fun, use a handmixer and mix it all up together. I like chunks of potatoes and cheese in my Mashed Potatoes but the texture is up to you. Just be careful, too much mashing and you’ll have potato soup!

Step Seven: Serve and top with green onions! Enjoy!
