Meal Prep: Week 4 of 2020

This has been one hell of a week. What’s crazy is that when I was meal planning for this week, something told me that I should I should plan simple. And in keeping with the universe’s theme this week, this blog is going to be short and sweet… and without the budget recap at the bottom. I’m sorry… I’m tired.

Anyways, we were back on our scrambled egg game this week adding cheese, spinach, and tomatoes. It’s fast and simple!

Lunches were honestly just turkey and cheese sandwiches with some baby carrots. Who doesn’t love the nostalgia of this meal… you know eating sandwiches and veggies in elementary school. Okay, maybe this isn’t actually what I ate in elementary school, but the thought was there.

Dinners were pretty tasty! Sausages…brussel sprouts… instant mashed potatoes.

If anything this week, I learned that time is precious and can’t always be well planned and controlled, but having a plan and having your meals prepped does really make all the difference.

My go to lunch item is a sandwich. For there is so much variety in a simple thing. It can be as simple as a pb & j to as complicated as a burger or a taco can be!!!^_^
